Whole fish is prepared cleaned and headless. 5 pound fish will yield approximately 4 pounds of meat.
The Copper River is long, cold, and powerful. This arduous upstream swim requires enormous exertion, and the salmon have to rely on huge reserves of built-up fat for fuel and insulation. Sockeye Salmon is high in good fats, though not quite as high as King Salmon, and delivers a deep, rich flavor. It’s flesh is an unmistakable vibrant red.
